Vince Maffei
Born and raised in the heart of Chicago’s Fulton Market meat industry, Vince learned every aspect of butchery at a very early age, the epitome of the term “pasture to plate”. Vince has managed processing plants for over 30 years and through Co-packing has helped over a dozen of his clients build multi-million dollar corporations from the ground up.
Vince specializes in product development, implementation, lean manufacturing and loss prevention. He is highly skilled at minimizing post-process waste through new product development. Highly dedicated to food safety and performance, well above and beyond USDA expectations.
Antonio Fiasche
Since his grandfather and father first emigrated from Spilinga, Italy to Chicago, the Fiasche family had set out to rediscover the full-flavored, spreadable salami ‘Nduja of his native Calabria. Eventually growing to produce a full range of traditional Italian salumi of the highest standard.
Today Tony is co-owner of Tempesta Market and Tempesta Artisan Salumi. Both are rooted in the rich Calabrian legacy of making unapologetically authentic and inspired products. By embracing local relationships, exceptional quality, and an uncompromising focus on artisanal craft, the culmination of more than 100 years of family expertise.
